Easy Vegetarian Creamy Soup

Cut up the vegetables of your choice and cover with water. When tender add some seasonings to them. Make sure you have enough liquid left with the veggies. Then serve up the soup in a bowl. Add some lite sour cream to your soup and a little sprinkling of Parmesan cheese. Make sure to add enough salt and pepper and you have some delicious creamy soup. (*Note: If you were to make one of my recipes of a Vegetarian Pie, you could have lots of leftover veggies for the soup, if you chopped up extra for the pie. And then you take care of two meals at once. You can serve the soup with your choice of bread, crackers or even a brown rice cake.)
